History

Our history began three generations with Jean Fays our grandfather. He only cultivated the vines. Then, the FAYS family estate was founded in the 70’s by André, father of the current owner. André perpetuated the work initiated by Jean and produced his first Champagne. Since 1985, Philippe Fays and his wife, Laurence, work a 4-hectare vineyard located in the heart of “Cote des Bar”.

Our wines are produced only from the family vineyard.

Passed down from generation to generation, our vineyard covers four hectares spread over 3 villages. In “Cote des Bar”, the soil is diversified, adjusted to each vine plots with its specific characteristic and composed of different clay-limestone nuances.

This quote is the Champagne Philippe Fays’ philosophy. The family vineyard is cultivated as a garden, respectful of environment. The Philippe Fays’ wines estate reflect the diversity of the terroir, while favoring its natural expression.

The majority of the vine plots are aged about thirty. To preserve the life of the soil, to improve the deep rooting and to avoid the soil compaction, grass is left to grow under the vines which are regularly ploughed.

In Autumn, organic compost contributes and reinforces the soil biological life. Strong defender of the sustainable viticulture, the use of inputs is limited to the strict minimum. Thanks to this integrated viticulture, the vines benefit from the specific elements of each terroir to reveal them in our different Champagnes.
